Homemade Almond Milk

Almond milk is a nutritious, nut-based dairy alternative. It is a nutritious, nut-based drink that is plant-based and vegan. Almond milk is also low in carbs and is rich in Vitamins E & D, and an excelent source of Calcium.

Try this simple, delicious recipe, and you will never go back to store-bought almond milk!

You will need: ( Makes 4 cups)
1 cup Raw Almonds
5 cups Cold Water
Cheese Cloth of straining

Optional (for sweetness/ flavour):
2 tbsp Honey or Maple Syrup or 3 pitted Dates
1/2 tsp Ground Cinnamon
1/2 tsp Vanilla
1/4 tsp Sea Salt

Directions:
Place 2 cups of cold water in a bowl, add a pinch of the sea salt and stir to mix. Add the almonds to the water, cover, place in the fridge, and leave to soak overnight.

Drain the almonds, rinse well, and place in a blender. Add the vanilla, honey/ maple syrup or dates, and sea salt and blend on low speed for 15 seconds, then increase the speed and blend until completely smooth (approx. 1 minute).

Place the cheesecloth over a wide-mouth bowl, pour the mixture into the cloth and squeeze as much of the milk out as possible. Discard pulp or google the many different ways it can be used.

If the milk is too thick, gradually add cold water until you get the consistency you want. Store in the fridge in an air-tight container.

 

Notes: 

Soaking the nuts results in creamier milk.

The pulp can be used in many ways, including making cookies!
